麻婆豆腐这样的经典菜式,一般人哪敢说做得很好很正宗,只不过吃得多了,依瓢画葫芦,能有个7分像就不错了。所有的川藉人士都说麻婆豆腐里的肉末要用牛肉,油要用菜籽油,但没有又有何妨?自家厨房做,有什么用什么,自己觉得好吃就行了。

豆腐切小块入开水锅里汆烫,水里放少许盐
